  • coconut milk
  • green curry paste
  • chicken breast
  • bamboo shoots
  • bell pepper
  • basil
  • rice
  • fish sauce

Directions

  1. 1Cook rice according to package directions and set aside.
  2. 2Slice chicken breast into thin strips. Cut bell pepper into strips.
  3. 3Heat oil in a wok or large pan. Cook chicken until golden, then remove.
  4. 4Add green curry paste to the pan and fry for 30 seconds. Pour in coconut milk and bring to a simmer.
  5. 5Add bamboo shoots, bell pepper, fish sauce, and chicken. Simmer 10 minutes. Serve over rice topped with fresh basil.
