Ingredients
- coconut milk
- green curry paste
- chicken breast
- bamboo shoots
- bell pepper
- basil
- rice
- fish sauce
Directions
- 1Cook rice according to package directions and set aside.
- 2Slice chicken breast into thin strips. Cut bell pepper into strips.
- 3Heat oil in a wok or large pan. Cook chicken until golden, then remove.
- 4Add green curry paste to the pan and fry for 30 seconds. Pour in coconut milk and bring to a simmer.
- 5Add bamboo shoots, bell pepper, fish sauce, and chicken. Simmer 10 minutes. Serve over rice topped with fresh basil.
