  • red lentils
  • onion
  • carrot
  • celery
  • garlic
  • cumin
  • vegetable broth
  • lemon

Directions

  1. 1Heat olive oil in a large pot. Sauté diced onion, carrot, and celery until softened, about 5 minutes.
  2. 2Add minced garlic and cumin, cook for 30 seconds until fragrant.
  3. 3Add red lentils and vegetable broth. Bring to a boil, then reduce to a simmer.
  4. 4Cook for 20-25 minutes until lentils are very soft and starting to break down.
  5. 5Squeeze in fresh lemon juice, season with salt and pepper, and serve.
