Ingredients
- red lentils
- onion
- carrot
- celery
- garlic
- cumin
- vegetable broth
- lemon
Directions
- 1Heat olive oil in a large pot. Sauté diced onion, carrot, and celery until softened, about 5 minutes.
- 2Add minced garlic and cumin, cook for 30 seconds until fragrant.
- 3Add red lentils and vegetable broth. Bring to a boil, then reduce to a simmer.
- 4Cook for 20-25 minutes until lentils are very soft and starting to break down.
- 5Squeeze in fresh lemon juice, season with salt and pepper, and serve.
