Directions
- 1Preheat oven to 375°F (190°C). Slice eggplant into 1/2-inch rounds and salt both sides. Let sit 15 minutes, then pat dry.
- 2Set up a breading station: flour, beaten eggs, and breadcrumbs. Coat each eggplant slice.
- 3Pan-fry breaded eggplant in olive oil until golden on both sides.
- 4Layer in a baking dish: tomato sauce, fried eggplant, mozzarella. Repeat layers.
- 5Top with parmesan cheese and bake for 25 minutes until bubbly. Garnish with fresh basil.
