Spinach and Feta Stuffed Chicken

  • spinach
  • feta cheese
  • garlic
  • olive oil
  • lemon
  • sun-dried tomatoes

Directions

  1. 1Preheat oven to 400°F (200°C). Butterfly chicken breasts by cutting horizontally without cutting all the way through.
  2. 2Mix chopped spinach, crumbled feta cheese, minced garlic, and chopped sun-dried tomatoes.
  3. 3Stuff each chicken breast with the spinach-feta mixture and secure with toothpicks.
  4. 4Sear chicken in an oven-safe skillet with olive oil for 3 minutes per side.
  5. 5Transfer skillet to oven and bake for 18-20 minutes until chicken reaches 165°F. Squeeze lemon over top before serving.
