Directions

  1. 1Preheat oven to 400°F (200°C). Cube sweet potato, toss with olive oil and cumin, and roast for 25 minutes.

  3. 3Warm black beans in a saucepan with a pinch of cumin and salt.
  4. 4Slice avocado and chop cilantro.
  5. 5Assemble bowls with rice, roasted sweet potato, black beans, corn, avocado, and cilantro. Squeeze lime over top.
