Directions

  1. 1Preheat oven to 425°F (220°C). Cut cauliflower into small florets.
  2. 2Toss cauliflower with olive oil, cumin, chipotle powder, salt, and pepper.
  3. 3Spread on a baking sheet and roast for 25-30 minutes, flipping halfway, until charred and tender.
  4. 4Warm corn tortillas and heat black beans with a pinch of cumin.
  5. 5Assemble tacos with roasted cauliflower, black beans, sliced avocado, cilantro, and a squeeze of lime.
