- rice noodles
- shrimp
- peanuts
- bean sprouts
- egg
- lime
- fish sauce
- tamarind

Directions
- 1Soak rice noodles in warm water for 20 minutes, then drain.
- 2Whisk together tamarind paste, fish sauce, sugar, and a splash of water for the sauce.
- 3Stir-fry shrimp in a hot wok until pink, then push to the side. Scramble egg in the same wok.
- 4Add drained noodles and sauce. Toss everything together and cook for 2-3 minutes.
- 5Serve topped with crushed peanuts, bean sprouts, green onion, and a squeeze of lime.
