Directions

  1. 1Soak rice noodles in warm water for 20 minutes, then drain.
  2. 2Whisk together tamarind paste, fish sauce, sugar, and a splash of water for the sauce.
  3. 3Stir-fry shrimp in a hot wok until pink, then push to the side. Scramble egg in the same wok.
  4. 4Add drained noodles and sauce. Toss everything together and cook for 2-3 minutes.
  5. 5Serve topped with crushed peanuts, bean sprouts, green onion, and a squeeze of lime.
