- red lentils
- coconut milk
- onion
- garlic
- ginger
- curry powder
- spinach
- rice
Directions
- 1Rinse red lentils under cold water.
- 2Heat oil in a pot. Sauté diced onion until softened, then add garlic, ginger, and curry powder. Cook 1 minute.
- 3Add lentils and coconut milk. Bring to a boil, then reduce to a simmer.
- 4Cook for 15-20 minutes until lentils are soft and creamy, stirring occasionally.
- 5Stir in fresh spinach until wilted. Serve over rice.
