  • red lentils
  • coconut milk
  • onion
  • garlic

  • curry powder
  • spinach
  • rice

Directions

  1. 1Rinse red lentils under cold water.
  2. 2Heat oil in a pot. Sauté diced onion until softened, then add garlic, ginger, and curry powder. Cook 1 minute.
  3. 3Add lentils and coconut milk. Bring to a boil, then reduce to a simmer.
  4. 4Cook for 15-20 minutes until lentils are soft and creamy, stirring occasionally.
  5. 5Stir in fresh spinach until wilted. Serve over rice.
