Directions
- 1Preheat oven to 400°F (200°C). Cut zucchini, bell pepper, and sweet potato into bite-sized pieces.
- 2Toss vegetables with olive oil, minced garlic, salt, and pepper. Spread on a baking sheet.
- 3Pat salmon fillets dry and season with salt, pepper, and dill.
- 4Roast vegetables for 15 minutes, then place salmon on the same sheet.
- 5Continue roasting for 12-15 minutes until salmon flakes easily. Squeeze lemon over everything before serving.
