  • bell pepper
  • sweet potato

  • lemon

Directions

  1. 1Preheat oven to 400°F (200°C). Cut zucchini, bell pepper, and sweet potato into bite-sized pieces.
  2. 2Toss vegetables with olive oil, minced garlic, salt, and pepper. Spread on a baking sheet.
  3. 3Pat salmon fillets dry and season with salt, pepper, and dill.
  4. 4Roast vegetables for 15 minutes, then place salmon on the same sheet.
  5. 5Continue roasting for 12-15 minutes until salmon flakes easily. Squeeze lemon over everything before serving.
