  • arborio rice
  • mushrooms
  • onion
  • garlic
  • white wine
  • parmesan cheese
  • butter
  • vegetable broth

Directions

  1. 1Heat vegetable broth in a saucepan and keep it warm over low heat.
  2. 2In a large skillet, sauté diced onion in butter until translucent. Add sliced mushrooms and cook until golden.
  3. 3Add arborio rice and stir for 1-2 minutes until lightly toasted.
  4. 4Add white wine and stir until absorbed. Begin adding warm broth one ladle at a time, stirring frequently.
  5. 5Continue adding broth and stirring for about 18-20 minutes until rice is creamy and al dente. Stir in parmesan cheese and serve.
