- arborio rice
- mushrooms
- onion
- garlic
- white wine
- parmesan cheese
- butter
- vegetable broth
Directions
- 1Heat vegetable broth in a saucepan and keep it warm over low heat.
- 2In a large skillet, sauté diced onion in butter until translucent. Add sliced mushrooms and cook until golden.
- 3Add arborio rice and stir for 1-2 minutes until lightly toasted.
- 4Add white wine and stir until absorbed. Begin adding warm broth one ladle at a time, stirring frequently.
- 5Continue adding broth and stirring for about 18-20 minutes until rice is creamy and al dente. Stir in parmesan cheese and serve.
